Delicious, quasi-healthy cookies without the hassle of baking? Sign me up. I made these cookies a couple of weeks ago and just had to share the recipe with you guys. I'm addicted, seriously. I found a recipe on Pinterest and tweaked it to make it work for my family. Enjoy!
I N G R E D I E N T S :
1/3 cup of honey
1 1/2 tablespoons of cocoa
1/3 cup of vegan butter
1/3 cup of peanut butter
1 teaspoon of vanilla
2 cups of unsweetened dried coconut
You could use coconut or almond butter to make this recipe paleo!
D I R E C T I O N S :
1. Mix honey, cocoa and butter in saucepan.
2. Bring mixture to boil over medium-high heat. Boil for one minute, then immediately remove from heat.
3. Stir in peanut butter and vanilla until mixture is incorporated.
4. Stir in coconut.
5. Spoon small balls of the mixture onto wax paper and put in the fridge until hardened. Store cookies in the fridge until eaten. Then eat about ten of them in one sitting. Oh wait, that's just me.

ReplyDeleteHi Maria! We use the Earth Balance vegan butter brand. It's pretty good, considering it's vegan! And we don't have a health food store near us so it's nice that this brand is sold at our local Publix grocery store.
